If you need a big game snack, here’s one that is always a hit.
Choose to use Jay’s Corn Puffs. My hubby prefers it this way.
Or it’s equally delicious with air-popped popcorn, a more frugal and slightly healthier option. Not sure you can use the world healthier when referring to a recipe with 2 cups of sugar, but at least you’re not adding the calories and fat in the corn puffs.
That being said…this recipe is worth a splurge.
Caramel Corn Recipe
1 bag of Jay’s Corn Puffs or two 1/2 cup batches of popcorn
2 sticks of butter
2 cups brown sugar
1/2 c. light Karo syrup
1/2 tsp. salt
1/2 tsp. baking soda
Preheat oven to 250 degrees. Spray pan (roasting pan or 10×15 pan) with non-stick cooking spray. If you’re using regular popcorn, pop (2) 1/2 cup batches of popcorn directly into prepared pan. Depending on the size of your pan, it may be easier to split the recipe into 2 pans to make it easier to stir.
In medium sized sauce pan, add butter, brown sugar, light Karo syrup and salt. Melt over medium-high heat, stirring constantly. Bring to a boil. Once you’ve reached a full boil, turn down the heat to simmer for 5 minutes.
Remove from heat, add 1/2 tsp. baking soda and stir. The caramel sauce foams up with the addition of baking soda.
Pour over popcorn. Stir carefully and quickly to coat evenly. Bake it in the preheated oven for 45 minutes, stirring every 15 minutes. Do not turn the oven any higher than 250 degrees – it’ll will burn the caramel sauce.
Dump on wax paper and allow to cool. Store in airtight container.
