Here’s a recipe for easy egg bake in mini jars. Perfect for on-the-go breakfast, to grab for lunch, a post workout protein snack, or breakfast for dinner.

Easy Egg Bake in Mini Jars
Makes 4 servings. 1 jar = 1 serving
4 large eggs
1/2 cup milk
salt and pepper to taste
your choice of chopped veggies (I used green onion)
shredded cheese
diced ham
4 oz jelly jars
nonstick spray
Preheat your oven to 350 degrees and spray 4 jelly jars with nonstick spray.
In a small bowl, combine the 4 eggs and milk. Whisk well.
Add a pinch of salt and pepper. Pour the egg mixture into each of the jelly jars filling 3/4 (the eggs will rise while cooking).
Add the toppings of your choice to each jar. I love that you can mix and match. Bake 2530 minutes. The tops of the eggs will turn golden brown and you will be able to put a toothpick in and pull out dry.
Cover and store in the fridge up to 1 week. To reheat, remove the cover and simply place in the microwave 30 seconds – 1 minute.
