My friend Sarah has made these simple, yet yummy cookies the last two years for our Christmas cookie extravaganza. The four ladies in my house church get together and bake cookies while the kids play together never begging for cookies even once ;)
1 carton Cool Whip (8 oz.)
1 egg
1 box lemon cake mix
Combine three ingredients. Prepare a small bowl of powdered sugar (add colored sugar for decoration). Drop spoonfuls of batter into sugar and roll into covered balls. Place on greased cookie sheet. Bake for 10 minutes at 350 degrees.
In a bowl, combine an egg and Cool Whip.
Add one lemon cake mix and mix well.
Prepare a small bowl with powdered sugar. Add colored sugar for decoration.

Place on greased cookie sheet. Bake for 10 minutes at 350 degrees.

I’m so happy that you posted this easy cookie recipe. I had to make some more cookies for Nutcracker ballet tonight after helping with the ballerinas for the last two nights and they needed more cookies to sell at intermission. These worked perfectly! Thanks. I’m going to try them with strawberry cake mix next time, I think. =)
